Ingredients
- 450g Fresh Chicken Mini Fillets
- 1 Cup Panko Breadcrumbs
- 1 Large Egg (slightly beaten)
- ¼ cup Grated Parmesan cheese
- 2 tbsp Water
- 1 tsp Italian seasoning
- 1 tsp Vegetable Oil
- ½ tsp Salt
Method
- In a small bowl, combine eggs and water. In a medium bowl, combine breadcrumbs, Parmesan cheese, Italian seasoning, salt, and black pepper. Add vegetable oil and mix thoroughly to coat crumbs.
- Dip the chicken mini fillets in egg mixture and roll in crumb mixture until evenly coated. Add coated chicken strips to air fryer basket in a single layer.
- Set air fryer temperature on 200°C. Turning halfway through, cook 8 to 10 minutes or until temperature reaches 73°C when tested with a meat thermometer.
TIP: If using a single zone smaller air fryer model, split into 2 batches which will add another 10 mins to the cook time.

Honey Mustard Sauce
Ingredients
- 6-7 tbsp Mayonnaise
- 2 tbsp Honey
- 2 tbsp Yellow Mustard
- 2 tbsp Dijon Mustard
- 1/2 tbsp Lemon Juice
- Salt to taste
Method
- Add mayonnaise, mustards, honey & lemon juice to a bowl. Mix well to combine. Add salt to taste.
- Enjoy straight away or if you preparing the sauce in advance, refrigerate overnight to enhance the flavours.

Easy Marinara Sauce
Ingredients
- 2 tbsp olive oil
- 1 onion finely chopped
- 1 garlic cloves finely grated or crushed
- 1 tsp dried oregano
- 400g can chopped tomatoes
- Salt & pepper to taste
Method
- Heat the oil in a saucepan or frying pan over a low heat and fry the onion until softened but not golden, around 8-10 mins. Stir in the garlic and oregano and cook for a further 1-2 mins until fragrant, then tip in the tomatoes and season. Cook gently for 10 mins until the onion is tender. Season further if necessary.
