Ingredients:

  • 70g Pistachio Nuts
  • 180ml Milk
  • 2 Eggs
  • 2 Tbsp Oil
  • 80g Sugar
  • 2g Salt
  • 200g Flour
  • 8g Baking Powder
  • Whipped Cream (Or your choice of toppings)

Method:

  1. Add the pistachios to the chopper bowl attachment of your Hamilton Beach 4-in-1 Hand Blender. Use the chopper attachment to finely chop the pistachios, then divide them into 20g portions to be used as toppings later. 
  2. Pour the milk into the blender beaker along with the ground pistachios. Attach the blender attachment and blend the ingredients for about 1 minute until the mixture becomes smooth and creamy. 
  3. Add the eggs, oil, sugar, salt, flour, and baking powder to the blended mixture. Use the blender attachment again to mix everything for around 1 minute, ensuring the batter is smooth and well-combined. 
  4. Heat some oil in a frying pan. Pour the batter from step (3) into the hot pan and cook until both sides are golden and fully cooked through. 
  5. Once cooked, transfer the items to a serving dish. Top with whipped cream and sprinkle the chopped pistachios over the top
