Ingredients
- 1 small, sweet onion, finely chopped
- 4 cloves of garlic, minced
- 1 can pumpkin puree (not pumpkin pie mix)
- 1 can crushed tomatoes
- 4 cups vegetable broth
- 1 cup water
- 1 cup red lentils
- 1 cup basil, finely chopped
- 1 tablespoon maple syrup
- 1 teaspoon salt + more to taste
- 1 teaspoon black pepper + more to taste
- 1 tablespoon nutritional yeast
Directions
- Add garlic and onion to a pan with a splash of oil. Sauté for about 8 minutes, or until softened.
- Add all ingredients to your soup maker. Cover and set to SMOOTH and press START.
- Once soup is done cooking, serve with your favourite toppings and sides.
