Rosemary & Garlic Focaccia

Ingredients

  • 350g strong white bread flour
  • 7g (1 sachet) dried fast-action yeast
  • 1 tsp fine sea salt
  • 210ml lukewarm water
  • 2 tbsp extra virgin olive oil (1 for the dough, 1 for drizzling)
  • Toppings: A few sprigs of fresh rosemary, 1 crushed garlic clove, and sea salt flakes

Method

  1. The Dough: Add the water, 1 tbsp of olive oil, flour, salt, and yeast into your bread maker pan (follow your specific machine's order, usually liquids first). Set to the 'Dough' cycle.
  2. First Rise: Let the bread maker complete its cycle until the dough has doubled in size (about 1 hour 30 minutes)
  3. Shape & Dimple: Generously oil a standard 9x13-inch baking tin or roasting tin. Gently stretch the dough into the tin. Press your fingertips deep into the dough to create signature 'dimples'.
  4. Second Rise: Drizzle the remaining olive oil over the top, sprinkle with fresh rosemary, crushed garlic, and sea salt flakes. Cover with a tea towel and leave to rise for 20 minutes.
  5. Bake: Preheat your oven to 200°C (180°C Fan / Gas Mark 6). Bake for 20–25 minutes until the crust is golden and sounds hollow when tapped on the bottom.
