Baked Sweet Potatoes With Steak Fajita Filling

Kitchen Hero: Hamilton Beach 3L Food Processor with Dicing

Ingredients 

  • 4 sweet potatoes
  • 2 tbsp olive oil plus extra to rub on the potatoes
  • juice 1 lime
  • 2 tsp chilli powder
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 500g lean beef steak cut into medium-sized strips
  • 2 onions thinly sliced
  • a mixture of 4 orange, yellow and red peppers thinly sliced
  • small handful coriander chopped
  • 2 avocados halved, stoned and peeled

Method 

  • Wash the sweet potatoes, prick them with a fork and rub with olive oil. Season generously, wrap in foil and bake at 220°C/200°C fan/gas 7 for 45–55 minutes, until tender.
  • Add the lime juice, chilli powder, garlic powder, cumin, olive oil and seasoning to a bowl to make the marinade. Add the steak to one bowl and coat well. Use the Hamilton Beach 3L Food Processor with Dicing to dice the onions and peppers, then coat them in the remaining marinade. Cover and chill until needed.
  • When the potatoes have around 20 minutes remaining, cook the diced onions and peppers in a frying pan for 12–15 minutes until softened and lightly browned. Remove from the pan, then cook the steak for 3–5 minutes. Return the vegetables to the pan and stir through most of the coriander.
  • Use the Hamilton Beach 3L Food Processor with Dicing to help prepare the avocado, or mash it by hand. Season with salt and stir through the remaining coriander.
  • Halve the baked sweet potatoes and fluff the centres with a fork. Top with the steak fajita mixture and a generous spoonful of avocado, then serve.
