Hariyali Green Herb Marinade

Makes enough for 500g chicken, paneer, tofu or vegetables

A fresh, vibrant Indian green marinade packed with coriander, mint, chilli and lime.

Ingredients

  • 40g fresh coriander, leaves and tender stalks
  • 15g fresh mint leaves
  • 2 green chillies
  • 3 garlic cloves
  • 2cm piece fresh ginger
  • ½ tsp cumin seeds
  • ½ tsp garam masala
  • ½ tsp ground coriander
  • 1 tbsp lime or lemon juice
  • 1½ tbsp oil
  • ¾ tsp salt
  • 2–3 tbsp water, just enough to blend

Method

  1. Add the coriander, mint, green chillies, garlic, ginger, cumin, garam masala, ground coriander, lime juice, oil and salt to the Hamilton grinder.
  2. Blitz to a smooth, vibrant green paste, adding just enough water to help it blend.
  3. Coat 500g chicken, paneer, tofu or vegetables thoroughly with the marinade.
  4. Leave to marinate for at least 30 minutes, or refrigerate for a few hours for a deeper flavour.
  5. Grill, bake, air-fry or pan-fry until cooked through and lightly charred.

Batch-cooking tip: Make the marinade ahead and freeze in portions for quick midweek meals.
